Barley changed colors!

I'm making barley for dinner (I hope). I sauteed leek and shallots, in olive oil. Added the barley. Added chicken broth and water, and a parm rind. The liquid is an unappealing gray. Kicker is I used a cast aluminum pot. I thought I only needed to avoid acid, which I didn't add. What happened?
