I was planning to make the Barefoot Contessa Crabcakes for an event on Saturday but need to make about eight dozen. Considering the overwhelming amount I need to make I am looking for alternatives. I was looking through some cookbooks and in the "Miami Spice" cookbook by Steven Raichlen I noticed a recipe for conch fritters. I would really appreciate some opinions on doing a fritter with Crab in hopes that perhaps I could get more crabcakes from a fritter recipe than a crabcake recipe. Is it possible to make a fritter with crab?????
