I ate at Bar Jamon again recently. The meal assessment was about the same as last time.

This was an interesting dish. There were two cured, very "meaty", very salty slices of tuna. The texture of the tuna was interesting, and unlike any other tuna I had previously exampled. The different parts of the tuna "shaving" almost were closely bound to one another, and the processing (curing? other processing) was significant. The role of the egg, which had a yolk that was neither runny nor solid, was to offset the saltiness of the tuna. The egg might have been poached in a little sac. Some frisee accompanied the dish.

Two sardines longer than my hand, with the whole head and tail included. Olive oil based saucing. One fish had backbone and small bones that were easy to remove, firm flesh, fairly good as far as sardines go, esp in the us. Other had bones that clung to flesh, and mushier flesh. Still, a fairly good attempt, and the provision of sardines of a size less commonly found in NY. Key aspects of dish were (1) two large pieces of marinated crisp-textured onion that conveyed a large amount of acidity appropriately, and (2) a piece of roasted garlic, skin on. Latter in particular was slightly surprising, in a slightly positive sense.
I had El Cantu Cheese, which resembled cheddar. Quite nice, and representing my first sampling of this cheese.
I ordered a glass of Chardonnay at 6, coupled with a little something for the cheese. Total spending was $42 before tips and after tax.
