Banana Bread: How do I get crispy crusts on muffins?

Nooshijoon | Sep 24, 201907:37 PM     11

I put my favourite banana bread into muffin tins in the hopes of getting some portable portions. I greased and floured the muffin tin like I do my loaf pans. I baked the batter for 25 minutes at 350. My loaf takes 1 hr 15 at the same temp. The results were disappointing. The sides of the muffin were were moist and well.... muffiny. How can get the crisper caramelized crust of my banana bread in a muffin tin? What am I missing in the chemistry?
