How to tell if bamboo shoots are canned or fresh?

I've always felt very ambivalent about bamboo shoots (note: I have only eaten them in restaurants, or they've been served to me, I've never bought them). I tend to either find them crunchy and inoffensive and acceptable as part of my ramen or stirfry, or I find them having a strong, urine-y taste/smell that seems to overtake everything else in the bowl. I'm guessing I'm experiencing canned vs. fresh. Which one is which?! I'd like to know so I at least know my own preferences in ordering going forward...
