Balthazar Short Ribs - Recipe Ingredients

Left the house this morning without my shopping list for the Short Ribs in the Balthazar Cookbook. Can anyone save me a trip home and a lot of valuable cooking time? I only need the items from the butcher (type/quantities for the aged beef and beef scraps) and any dairy products. Thanks
