Baking Chocolate Vs. "Regular" Chocolate

Just wondering if someone could tell me what's so special about baking chocolate versus regular bars of chocolate. I know some people who bake with just regular chocolate bars (of high quality, though, like Valrhona), but reading online I see that baking chocolate is designed to be melted uniformly and what not. I was just wondering what people's experience was in this regard. Thanks.
