One of my favorite smoked fish things from an appetizing store to eat on a bagel is what has always been referred to as "Baked Salmon." Obviously, it's not simply baked, and Russ & Daughters labels theirs as "kippered" salmon.
What exactly is this? Simply hot-smoked salmon (whereas nova and other "smoked salmon" are cold-smoked?)
I've thrown a slab of salmon in my smoker a few times and liked the product, though I've eaten it more as a hot entree than a cold bagel topper. Is kippered salmon simply the same thing?
