What can I bake with shredded carrots

I found a bag of pre shredded carrots my house sitter left behind. What can I make with them please?

    Val Your title refers to "bake" but why not make a healthy stir-fry with them tonight? I love pairing them up with broccoli....there...

        Last night I made the most amazing carrot souffle. My children scarfed it up & ignored their rice & chicken!

        This is my aunt's recipe that she gave me:

        1 to 1 1/2 lbs cooked carrots (I steamed mine)
        3 eggs
        1/3 cup sugar
        2 T flour
        1 t baking powder
        1 t vanilla
        1/2 cup melted butter
        dash each of nutmeg & cinnamon

        Puree cooked carrots until smooth. Add eggs. Add rest of ingredients & puree until nice & smooth. Pour into greased 1 1/2 qt. dish. Bake at 350 deg. for 1 hour. Serves 4-6.
