I bought a three-pound box of quality bacon scraps--have never seen that product or packaging before. The contents are a mixture of bits as large as half-slices and then also various random shreds. There seems to be a number of chunks that are nothing but fat, which I might separate out and render.
Anyway, I don't eat lots of bacon, so my intention is to parcel these into vacuum sealed portions for freezing, so I'll be able to grab some for various recipes down the road. My questions:
1. How many recipes do you know and like that involve bacon in this reduced form?
2. I am thinking I'll freeze the bacon in quarter-pound sizes, but I wonder if there's any reason to think of different sizes, larger or smaller.
