Bacon de dinde

The French are selfish hedonists. I say this because I just discovered Bacon de dinde. They have this delicious, heavenly, smoky, meaty wonder and have never shared it with us.

I got it at a butcher shop without knowing what I was buying. My policy is that if I see a fruit, meat, vegetable or cheese that I have never eaten: I buy it.

It is very thinly sliced and has a sheen; it looks something like lox, and not at all like bacon. Totally smooth meat with no stripling of fat.

I placed a thin slice on a hunk of fresh baguette. Heavenly. Meaty, smoky, packed with flavor.

I had no idea what I was eating, but I devoured the entire packet.

Then I went back to figure out what I was eating.

It translates as turkey bacon, but don't be deceived. While it does have the smoky meatiness of a really good lamb bacon, you would never guess that it is turkey (at least, I didn't.) It has very little resemblance to any smoked turkey I have ever eaten. It is nothing like any cured meat that I have ever eaten in before in my life.

If I take some home to the U.S. the TSA will take away my global entry card.

I wish, oh how I wish, that some enterprising entreprenuerial French kosher butcher would export it to the U.S. Small hope of that; not only are the French so selfish that they keep all the really good food to themselves, no one in France wants to make a fortune. They are too happy drinking wine and keeping Bacon de dinde to themselves.
