Baby shower for 80 - Kitchen impossible - All suggestions welcome

Hello foodies! Recently in order to help out a friend for around 12 years, I maybe (well yes actually) bit off more then I could chew. She is having a modern baby celebration with around 70- to max 100 people (unisex) and a fairly small budget. As the main party hostess in the group of friends I have agreed to cook for all of and pay for a portion of the party.While its not the size or the budget I find daunting, its the cooking space (or lack there of) that has me in a pinch.

The party is in a modern brew pub with no kitchen. Read that NO KITCHEN. Everything will have to be made in advance, and I dont want a bunch of run of the mill cold boring apps. And also since she is going to be a single mom, this is her big day and I want everything to be perfect.

Im looking for INNOVATIVE make ahead appetizers or entrees that can be served room temp or cold. She said she prefers more finger food, but I have some plug space for chafing dishes and crock pots etc. Also considering the party is half men (and there is a blue grass band playing) I doubt an all finger food menu will cut it. I already have a few things planned - deviled eggs, mini quiches (or maybe just plain ol' quiches), orzo salad with edamade and feta, asian coleslaw, spicy shrimp on endive (sounds snotty looks and tastes delicious), chicken satays... perhaps some kind of bruschetta, maybe pulled pork sandwiches? Again its the lack of kitchen that concerns me. Any help is welcome... Im starting to feel like a 5'0 woman version of Robert Irvine on the Kitchen Impossible.
