Having a big BBQ tomorrow and have 20 racks of beautiful ribs to smoke. They are in a marinade now and then will get a rub and then on the BBQ at low heat to smoke. Finish with some sauce.
The question is if I'm smoking them how long should they be smoked for. My BBQ lowest heat, semi indirect is about 200 degrees.
Second question, can I cook them to a certain point then hold them. Should I keep them warm in the oven or reheat them.
