baby artichoke help needed

I would like to include baby artichokes on an appetizer plate I'm serving tomorrow night but I've never made them before. Originally I was going to serve half a regular artichoke on each plate (accompanied by sage butter and with a mound of lump crab meat, a mound of caviar, a mound of cream fresh, etc on each plate) but saw some lovely baby artichokes at balducci's last night and the sign by them says that they are edible in their entirety which would make them much easier to manage! What can you tell me about their preparation, taste and eating techniques?
