I was wondering if anyone had a recipe for Kassler (a smoked/cured pork loin). Please note that I'm not looking for recipes using this as an ingredient. This was (I think!) created by Herr Kassler in the early 1900s. It's smoked THEN cured (yeah, that's the order!) I have found a recipe that calls for curing THEN smoking and I'll give that one a try (once I get some alder wood). But I've searched the web and haven't found a recipe that calls for smoking first. Maybe the smoke first/cure second is an urban legend (I don't know the full history of this dish), but I thought I'd see if the 'hounds could help out.
