authentic italian

not to be pretentious, but can anybody recommend authentic italian (bolonese would make me very happy, but I would settle for generic italian) food in the city.

I mean the classic menu; with no more than 10% of the dishes "invented" by the chef; good fresh produce; a menu that follows the logic of appetiser, pasta, meat, dessert; the right sauces with the right pasta, a rissoto with stuff actaully cooked in and not thrown on top as an afterthought, and good service.

I can see from the boards here that a lot of people travel in italy, but the resterounts that I have seen in nyc either have mushy pasta and bland flavors, or try to reinvent the whole concept of italian food.

any ideas?
