I'm moving to Austin in a couple of months, and I wanted to know where I might be able to find banh mi like the kind I currently love and consume.
I read the last thread about Ba Le and Tam's Deli, and I couldn't tell if either carry the particular combo that I always get here in Dallas - pate, the sliced whitish sausage, ham, pig's ear, cilantro, green chilies, onion, pickled jicama and carrot, cucumber, and mayo. The pate and the pig's ear are particularly critical for me - I love the cartilaginous crunch.
Also, does anyone know how to make the picked jicama and carrot that come in the banh mi and often on the side with the various grilled dishes, etc.? It tastes fairly simple - vinegar, sugar? Anyone know the proportions?
