So, we tried two different Philly cheesesteaks as recommended: Jersey Mike's and Delaware Subs (Medical Parkway). We ordered them as offered, with no alterations.
Jersey Mike's: This place is a chain that was originally a restaurant on the Jersey shore (not Philadelphia but close enough if you are in TX). Straightforward and simple - white, soft bread filled with steak, white american cheese, grilled onions, and cherry peppers. Not a huge sandwich, but proclaimed as "pretty authentic hoagie" by my girlfriend. I liked it too. They bake the bread and slice up everything right in the store...
Delaware: Really good, but a bit more complicated than the Jersey Mike's. We split a 14 inch for eight bucks. Again, they take time and grill all the onions and cherry peppers, etc. It was a very good sandwich, but there was some tomato product in there that I might skip next time. The bread was soft, but a little too brown on the outside.
Verdict - I'll go to delaware for the better deal ounce for ounce and because it's local.
Still need to try Texicalli and Hoody's. I can't bring myself to go to Dave and Busters, as I heard they had a good one, too.
