August Restaurant Closings - Suggestions?

Hi there!
I've been calling places for our trip and a good number of them will be closed for August, especially in Florence! Suggestions for places to eat in August?? A good number of places are open in Rome, but I'm not sure what to make of Venice or Florence. I know there are links for closings for last year, but I've only been able to find links for Rome and not the other cities.

Rome:
Metamorfosi closed all August

Florence:
Il Santo Bevitore
Trattoria Sostanza
Da Ruggero
Cibreo
Tre Soldi
Enoteca Pinchiorri (most of August)

Venice:
Antiche Carampane

Others to add to this list? I've been looking up all these places, calling or emailing them and then finding out they will be closed.
