Just wondering if you put the chopped greens into the gumbo or just use the greens cooking water? The recipe just says "Remove greens to a cutting board (reserving 2 cups of cooking water) and chop coarsely, set aside." The greens are never brought up again in the recipe, just the cooking water is. If you do put the greens in, do you put them all in?
It says serves 4, but geesh, this is a huge amount of gumbo! I don't know if I have a tupperware big enough to store it in!
