I decided this year I'll take the plunge and attempt homemade gefilte fish. I've never made it before, although from the recipes it doesn't look that crazy. Any advice or recipes that people have would be greatly appreciated. One question in particular that I have is regarding fish stock: if I buy premade fish stock from my local fishmonger, will that work? Most of the recipes I've seen call for making your own fish stock with the bones of whitefish, so I wasn't sure if the stock would be very different coming premade from a fish monger, where perhaps it's not made using whitefish, and if so, whether that would dramatically impact how the gefilte comes out. I was hoping to avoid making my own stock for a) the time/ease and b) to avoid stinking up my whole studio apartment with the smell.
