Asparagus - how do you eat it?

Bigley9 | May 7, 202012:24 PM     42

I love asparagus when it is in season locally. Its the beginning of the season for me now and I will eat it daily until its gone. I generally cook it very simply and eat it relatively plain - garlic and oil, a lemony vinaigrette. I love this tart from epicurious https://www.epicurious.com/recipes/fo... and I make a good asparagus risotto (I make an asparagus "stock" from the ends of a weeks worth of asparagus eating). That said, I am always looking for other must have asparagus treatments. What's yours?
