I am trying to incorporate Asian cuisine into our family, but my daughter is severely allergic to coconut, therefore most commercial curry pastes are not an option for us. Also at age 7, she is quite wimpy when it comes to heat :-) (though, she appreciates other spices!).
She is allergic to many nuts still but recently overcame peanut allergies. Yey! So now I can try some peanut recipes for her.
So -- what easy recipes can I make with rice noodles, lots of vegetables, lemongrass, other spices/herbs and tofu?
Specifically, all peanut sauces seem to contain coconut milk. Is it possible to make peanut/tamarind sauces without coconut? I'd really appreciate some handholding here.
