Since I was cooking from the Piemonte tonight, I decided to try my hand at an Artichoke sformato. I used a cup of fairly thick bechamel with 2 artichokes pureed and 1 artichoke chopped for texture. The artichokes were first cooked in water and white wine with a bit of salt and flour. This was set with one egg yolk and one egg and cooked in cupcake cups in a ban marie at 400 for around 35 minutes. Very tasty and did not need fonduta but would not have been hurt by it. For you nouvelle cooks out there, this could be adapted to many vegetables and could be cool in a bowl of soup. Source recipe is in linked post.
