Friends of ours host an annual Oscars party, for which they randomly assign best picture nominees to attendees, and it's our job to bring a dish that's somehow connected to our assigned film. It's a lot of fun.
This year, my husband and I were assigned 'Moonlight.' If you've not seen it, there's a great scene in which one character lovingly makes a meal for another. A quick online search tells me that dish is arroz con pollo, which I am fairly unfamiliar with. I'd like to make it to to take to the party, but I'm overwhelmed with the many different versions I'm seeing online. Does anyone have a killer arroz con pollo recipe they wouldn't mind sharing?
I have an Instant Pot, and I really like how chicken, especially dark meat chicken comes out. So if anyone has a pressure cooker version, that'd be a bonus.
