I am itching to get another Japanese knife, but want to make sure impulse is not over-riding reasons. :=)
I have a 6" light chef knife (Shun) that is superb for slicing veggies. I also have a Henckel's 8" chef knife for some of my heavier work.
What I want (ah, this is where impulse comes in)...is a knife that is better for chopping nuts and veggies with a rocking motion. The Shun is too light to be doing that and that Henckels is not only a but the blade is straight on top, which makes it uncomfortable ro rock. I think I am looking for a Santuko-style blade, if that's right, since in has a curbed top edge at the tip, easier for rocking. I also say a fairly wide blade form Shun -- called a 7" rocking blade.
Any suggestions on type and brand? I want to keep it is <= $150.
