I was in Whole Foods the other day to get some fish. I was thinking maybe salmon, when I noticed that they had arctic char. I had it once at Christer's (a great Scandinavian restaurant in New York City) and remembered that it was really good. I changed my mind about the salmon and got some arctic char instead. When I got home it was a work night and I had a class to get to (so 10 minutes or less to prepare dinner). I rummaged in my fridge and found some almost dead basil and cilantro and some wilted scallions. I found one good carrot and an open bottle of white wine. I grabbed some parchment paper and put down a little pile of the aforementioned herbs and veggies. I salted and peppered the fish and put a little pat of butter on top, then laid it atop the pile. Sprinkled on some juice from a brown, shriveled lime I also found in the depths of the crisper. Splashed some wine on it and folded up the paper. Shoved it into a 500 degree oven for 11 minutes and WOW! The fish was delicate and moist and delicious. I'm now dreaming of buying more arctic char if I can find it again. So, anybody have any arctic char tips, favorite recipes, places to buy, restaurants who are serving it, etc.?
