Welcome to the April 2019 edition of Cookbook of the Month! We will be cooking from Salt, Fat, Acid, Heat by Samin Nosrat.

Finally, I would like to extend a special welcome to anyone new to Cookbook of the Month (COTM) or returning after a break. This is an inclusive community for home cooks of all levels, even if you're brand new to cooking! We learn a lot as we cook together, and we are thrilled when newcomers join us for the camaraderie and shared learning of COTM.
