I have been baking since I was old enough to pull a chair to the counter, always loved creating new recipes and experimenting with new ideas. But for some reason, this project has me stumped.
I've been trying to make an apple spice bread that doesnt have apple chunks in it. The consistency and spices are near perfection, but I can't seem to get a strong apple flavor. I started out with pureed granny Smith apples, that wasn't strong enough. Then tried unsweetened apple sauce, that was no better. My latest attempt was pureed apple along with substituting water with unpasteurized apple cider.
Any wisdom or ideas?
