Apple Almond Frangipane Tart

oakjoan | Oct 25, 2007 05:50 PM

I made this tart today, adapted from Jamie Oliver's Kitchen book. It's supposed to be made with plums, but I had apples, and so....

It's a mixture of ground almonds flavored with lemon zest, mixed into sugar and butter. Chunks of pistachios are added to the mix. That mixture is then spooned into a baked pate sucre shell (which you have previously baked blind). Quartered apples (in this case wonderful and newly arrived Arkansas Blacks) are then pushed into the almond mixture and the whole thing is baked for an hour at 350.

I tasted a couple of pieces that fell off and it's pretty grand. Will let you know when guests have eaten it.

In my op., Oliver is a true master of the tart/cake/pie genre. His ricotta pie with chocolate and orange, his hazelnut tart with ricotta, his two nuts chocolate tarte and his polenta orange cookies...okay so those are cookies and not a pie...

Photos are attached, but they're a bit dark.
