Make-ahead appetizers / snacks to be served at room temp for 25, including vegetarians

OK, I'm in charge of snacks for an upcoming meeting (no children). It's one of those situations where most people in the group, when it's their turn for snacks, will just swing by Trader Joe's and bring a combination of savory and sweet TJ's snacks. But, I'd like to go to a little more effort than that without going overboard. About 1/3 of the attendees are vegetarian, though there are a couple of avowed meat lovers in the bunch, too. Not everything needs to be vegetarian, but at least a couple of things have to be. Everything will need to be made ahead a day or so in advance and will need to be served at room temp--I can barely get to the meeting on time as it is! No time for last minute prep.

I was thinking spiced nuts would be good to do for this crowd.

And then maybe spicy garbanzo beans and/or bean salad with chips and/or goodhealthgourmet's smokey black bean dip. (I think I should do only one of those three, though, otherwise it's just too legume heavy...)

I like the idea of having something fresh and seasonal, so I was thinking maybe a Waldorf salad with endive. Is that too much overlap with the spiced nuts because it has walnuts in it?

I saw a BLT dip in an earlier thread that sounded good (scallions, bacon, quartered cherry tomatoes, mayo, etc.) but I don't think the cherry tomatoes will keep overnight (or all day if I prepared it in the morning) if I did it in advance.

Also, something sweet that would be fun but not too much work?
