Antipasti platter for 15-20 - need help with portions

I need some help on calculating how much meat and cheese to provide for an antipasti platter that will serve 15-20 people. I'm thinking of an assortment of the following:

- Mortadella
- Rosa salami
- Sopressata
- Italian spicy sausage (4 per package)
- Proscuitto-wrapped asparagus
- Bocconcini
- Italian fontina
- Asiago
- a selection of marinated artichoke hearts, cippoline onions, olives, kivina gigandes
- grilled zucchini and eggplant to the platter

There will be at least three other appetizers available, each serving 15-25 people (there will be about 70 adults and 30 children in attendance). A full buffet lunch is also being served - green salad, pasta salad, other side dishes, beef barbeque and a 60lb+ roast pig.

The picture of the round platter (15" diameter) was for 6 people (pre-dinner) and there was a lot leftover. The rectangular plate (14" long) was for 3 people, but no other food following.

Can you help me to gauge how much to buy??? Thanks for your help!
