So, I've been on a bit of a Tiki kick lately and have homemade Orgeat, Falernum, Pimento Dram, and Cinnamon Syrup in the fridge as well as several citrus fruits.
I've made many Mai Tais and Fog Cutters, but really want to give the Jet Pilot a whirl. This particular reciple calls for 1/8 tsp of Pernod. I have no Pernod, Absinthe or Herbsaint in the house, but I do have a bottle of Anisette. I'm assuming in a drink with several rums, strong syrups, lime and grapefruit, that really just the anise flavor will come through from the Pernod, especially in such a small amount.
Many tiki cocktails call for such a tiny amount of absinthe or Pernod, but I really don't want to spend the cash on a bottle. How do you think the substitute will work? I'm gonna make a Jet Pilot tonight, but I guess I'll have nothing to compare it too.
