Trying to eat a bit more healthily - upping the veg, lowering the fat, eating complex carbs, etc. I bought way too much zucchini for the zucchini bread I'm making, and I don't know what to do with the extras.
I'm a bit frustrated - I really don't like zucchini. It's a wimpy vegetable, without real flavour, so the usual culinary response is to toss it in lots of olive oil. I wouldn't mind that if the olive oil magically transformed zucchini into something delicious, but it just makes the zucchini palatable. I'd enjoy olive oil much more with a bit of crusty bread...
And the texture... it just tends towards 'floppy' and 'watery'. And this isn't just me cooking it badly; most zucchini that I've had made by others (including restaurants) also is totally lacking in character.
So I either need a recipe which disguises them (such as zucchini bread) or something which will make me change my mind about its wimpiness, without relying on a whole bunch of butter, oil or cheese. Any suggestions would be welcome!
