Ok, so because someone recently mentioned good Angel Food Cake recipes, I decided to make one yesterday. For some reason I had a lot of egg whites that needed using up. Anyway I used the Epicurious recipe in the recent post (I think I've attached the link below). Everything was looking hunky dory until about 3/4 of the way through the baking time, at which point the cake began to fall. Not drastically - no huge disaster or anything - but it definitely lost about 1/3 of its volume. It looks ok but not fabulous. Haven't tasted it yet - I'm planning to serve later today with strawberries.
So what happened? Did I over-beat the whites? I realize the cake obviously lost structure and couldn't hold itself up but I'm not sure what the reason was. I'd really like to try this again sometime.
