I discovered the other day that Cafe Bastille's menu now includes andouillette, which I tried post haste Unfortunately, while it was a perfectly nice tripe sausage, it was not a propery andouillette. The tripe was finely diced, and the seasoning was different.

Anybody seen the real thing locally? I've been looking for years without success.

Note that French andouillette and its big sister andouille are very different from Cajun andouille, which is a smoked pork sausage.
