I am a transplant from N.O. living in Calif. I have tried several andouilles from sellers who ship but haven't found the right one. Jacobs is very highly regarded: it is high quality, nicely smoked but so extremely lean that it comes out as tight as a rope if grilled or even in gumbos. K-Pauls ships a pretty good sausage, but with an artificial casing, I think. I saw a brand in the grocery store there last week, "Savoie." The company ships, but is it any good?
