You guys have always been a big help with culinary hips and tips; I've got two quick questions: at the farmer's market I picked up a basket of multicolored Anaheims (for a dollar, no less). I want to do something neat with them, perhaps stuff them...but with what? Any inspired/eclectic ideas? Or should I just stick to good ol' Mexican cheese and maybe a little spiced and shredded chicken? I've found a couple recipes for stuffing poblanos, but I confess I don't know the difference b/t the two...are Anaheim's spicier?
