In the interest of posting about great new places to eat, I wanted to start a thread for Amuleto in Waltham. BF and I have eaten here several times and are always blown away by the food and have gotten consistently great service (we always sit at the bar). We always start with guacamole. It is well seasoned and balanced, not lime heavy as some can be. You can get it "classico" or topped with red chile sauce and pepitas, or with pork belly. You can't go wrong with any of them. Diners also receive a complimentary dish of vegetable escabeche, which is currently fall vegetables (Brussels sprouts, carrots, green beans, potato).
We have tried several of the tacos, which come 2 to a serving. The filling range from shrimp or fish to various permutation of pork, beef or chicken. The shrimp one contains a layer of crispy, browned cheese that provides a nice textural counterpoint to the soft tortilla. They also offer jamaica (hibiscus flower) as a filling in their vegetarian taco offering, which comes with a sweet and sour salsa (tamarind, I think) that was outstanding.
We've also had their chorizo in a variety of dishes. The queso fundido in particular was fabulous; get a couple extra tortillas and prepare to get a little messy. For entrees, we have tried the carne asada, which has always come to BF's requested doneness, the camerones a la diabla (warming, creamy sauce that is just spicy enough and redolent of roasted garlic), and the birria. Amuleto's version is a braised lamb shank that comes in a bowl with a chile broth and hominy. I dream about this dish. Also, it is easily enough for two people, especially if you are getting a couple other appetizers to share.
Finally, if you are an octopus fan, Amuleto offers it as a tostada with avocado and as a grilled plate with mushrooms and onions. The octopus is tender and smokey. It is well complimented by any of the salsas that come complimentary with the appetizers. It's nice to add a spoonful of a different one to each bite to vary things up. You can choose between charred habanero, red chile, and tomatillo ones.
