Amphora Cafe(s) -- A GOOD CHAIN?

Pursuant to the giant ranty Cheesecake Factory thread on Not About Food, it occured to me that perhaps the Amphora Cafe represents a really encouraging trend towards chain restaurants that focus on quality and detail. I have only eaten at their restaurants a few times but iirc they really do things right. In particular, I remember an openfaced turkey sandwich that was superb. Real, fresh bread, slices of actual turkey, a good rich gravy, perfect French fries, some decent fresh vegetables on the side. Just great. And when I read some clipping they had posted in the lobby of the Fairfax place I saw that they had another joint near Dulles, and I tried that and it was really good. The clipping mentioned their bakery, which explained the remarkable selection of cakes and pastries that I had noticed, and it mentioned that they buy primal cuts of beef and do their own butchering. And with at least two locations (plus the bakery) they are at least technically a chain!

DC has a superior food scene to Dallas (my home) and so perhaps I was just generally awestruck. Also I was spending time in nicer neighborhoods than where I usually hang out when I'm not on vacation. But I know where the restaurants are around here and Dallas has nothing that really compares to the Amphora. What do you locals think of the place? I have mentioned them on this board before without anyone telling me to stay in Dallas but based on my experiences there I would expect to see daily raves and updates. Does my memory exaggerate?
