Most Amazing Roast Chicken

mardiwetmore | Nov 25, 201801:44 PM

I had a raw chicken in the frig to roast for my weekly 'deli chicken'. Then I found that my oven has decided to take a dive. So, I cooked it in my Air Fryer. It ended up the juiciest and easiest deli chicken I have ever made. The only problem I ran into was that I needed to flip it half way through and that was pretty tricky since it was a very tight fit in my air fryer. Next time I'll make a foil sling to put it on so getting it out to flip over won't be such a chore. The 5 pound chicken cooked pretty quick since I had removed the backbone in anticipation of cooking my spatchocked chicken in the oven. So the first 30 minute cook breast side down (at 350 degrees) cooked the wide open chicken. The recipe called for another 30 minutes once flipped but it only took another 20 minutes. The skin was golden brown and crisp. The white meat was juicy and the legs were perfectly cooked.
