My SO has recently been diagnosed with a wheat allergy. He's a total carb junkie whose favorite food is mac and cheese, so it's a fairly devastating diagnosis. He has never been an adventurous eater, and I'm looking for creative substitutes for wheat.
Here's what I'm doing so far:
instant mashed potatoes for breading pork chops
cooked rice as filler in meatloaf
sandwiches are made with corn tortillas or wheat free-pumpernickel bread
rice noodles for pasta
Any other suggestions for weaning off wheat?
