Alla Morronese... Sauce for Pasta?

erica | Oct 28, 201801:52 AM     10

The other night, in a small restaurant in Sulmona, Abruzzo, I was served a first course of Paccheri alla Morronese, which included the dried paccheri with a sauce of pumpkin, porcini, bits of truffle, and ground veal. It was spectacular and certainly would be very easy to make even if one could not include the truffles. The name, I was told by the wait person, comes from nearby Mt. Morronese near Sulmona in southern Abruzzo. I assumed that it would be simple to find a recipe online. But I cannot find one, so it might be a dish made up by the restaurant (Don Ciccio) Has anyone heard of this pasta dish who can provide a recipe, or more info? I certainly can cobble it together based on the ingredient list but it might be nice to have specific amounts and additional ingredients if there are any (onion, garlic, for example).
