I particularly love this late summer/early autumn time of year when a huge diversity of chile peppers are available, both sweet and spicy. The organic farmers that come to this market grow some rare types, such as chiles de agua used in Oaxaca cooking. I make the best rajas con crema of the year at this point in the season when I have all these colors and flavors available to me.
