Which alcohol instead of white wine?

Making cioppino tonight, which means heading down to the best seafood market in town for some seriously good ingredients. Problem--I'm going to try, but can't guarantee that there will be a decent bottle of white wine anywhere nearby.

All I have at home that might work are a bottle of very dry champagne, Martini & Rossi's dry vermouth, and vodka. Which would be best? Would the champagne work since the bubbles will evaporate? I could always serve it with dinner.

I'm really hoping to kick start a new round of cooking. A dark cloud's been hanging over my cooking skills all week.
