Just wanted to drop a note to say that Toronto finally has a Taco Al Pastor location that does it correctly - carved off a vertical broiler instead of on a flattop. The place is Tacos 101 on Dundas east of Yonge. Just opened up I think.
The Al Pastor marinate is correct, there's caramelized pineapple, white onion, and cilantro. Didn't quite have the crispy char that perfect vertical broiler can do but a lot of that comes down to having an ideal customer speed (equal to the cook time). It certainly was moist and flavorful.
They still suffer from the same problem as everywhere else in Toronto - the taco's are too damned big. I wish that, instead of a $4 taco that is heaped so full of meat that you need a double shell and it still gets soft and falls apart half way through eating it, you could get a reasonable sized $2 taco and have room afterwards to order "Uno Mas!"
