Adzouki Beans Advice?

JessEvans | Jan 14, 201602:44 PM     7

Hi, I have a pound of Adzouki beans to play with. There's a lot of very contradictory advice out there about these little beans. Some people say you don't need to soak them, some people say you do. (I know there are folks who never soak but I get better results from other dry beans from soaking overnight in salted water before cooking.)

Another oddity is that I've run across a few recommendations to boil them and then discard the water once or twice. One of those recommendations was for making red bean paste but the other was just for cooking them for use in salads or soups. The person said they would taste better that way. Since I usually cook beans right in their soaking water, this would be contrary to my instincts, but is there some flavor in them that needs to be removed or diluted?

If you are an adzouki bean fan and you enjoy them in savory dishes, please weigh in. What is your preferred method of cooking? Do you have a favorite recipe? (I'm especially interested in warm dishes as I'm not much of a salad eater.)

Thanks!
