Need advice on turning GF Pumpkin Cranberry Cookies into a granola like topping

Hi all, I made some GF pumpkin breakfast cookies for a gluten free guest. I will try them again but want to add more fall like seasoning. Here's my question. Can I crumble and toast these moist cookies with additional ingredients, maybe more pumpkin seeds, cranberry, spices, maple syrup. Any suggestions for temp, time etc, would be appreciated. Thanks in advance.
