Need Advice for serving soup to a crowd

I am serving winter squash soup to 32 people tonight at 8:30PM EDT. I need to add the dairy and warm it up. The base is currently refrigerated. Any advice? What time should i take it out of refrigerator, add dairy and warm it? TIA
