I ran across these in a catalog and thought they wouldn't be hard to recreate. However, I don't have much experience with ganache, apart from a ganache frosting for cake (8 oz chocolate, 1 cup cream).
I assume that you could take such a mixture, whip it in the standing mixer, and put in a pastry bag to pipe out little teardrops; then add the almond slices for ears, chill, and dip in chocolate. Does this sound like the right process, or do I need to do more homework?
Also, any recommendations on good quality white chocolate that is readily available at supermarkets? Trader Joes is a possibility, though I have to travel 45 mins to get there.
